Very Veggie Couscous Salad

INGREDIENTS

  • 2 cups cooked couscous
  • ½ cup shredded carrots
  • 1 cup chopped spinach
  • ½ cup quartered cherry tomatoes
  • ½ cup chopped red onion
  • ¼ cup chopped cilantro
  • ½ cup chopped bell peppers

DRESSING

  • ½ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • 2 tbsp Manuka Doctor Honey (MGO 80 recommended)
  • 1 tbsp of wholegrain mustard
  • 1 tbsp of nutritional yeast (optional)
  • Salt and lemon pepper seasoning to taste

DIRECTION

  • Mix all the salad ingredients together in a large bowl
  • Mix all of the dressing ingredients in a separate bowl and whisk together
  • Pour dressing over salad and mix together well
