Very Veggie Couscous Salad
INGREDIENTS
- 2 cups cooked couscous
- ½ cup shredded carrots
- 1 cup chopped spinach
- ½ cup quartered cherry tomatoes
- ½ cup chopped red onion
- ¼ cup chopped cilantro
- ½ cup chopped bell peppers
DRESSING
- ½ cup extra virgin olive oil
- ¼ cup apple cider vinegar
- 2 tbsp Manuka Doctor Honey (MGO 80 recommended)
- 1 tbsp of wholegrain mustard
- 1 tbsp of nutritional yeast (optional)
- Salt and lemon pepper seasoning to taste
DIRECTION
- Mix all the salad ingredients together in a large bowl
- Mix all of the dressing ingredients in a separate bowl and whisk together
- Pour dressing over salad and mix together well
