Grilled Peach & Honey Salad
INGREDIENTS
- 3 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- 2 tablespoons Manuka Doctor Honey
- 4 cups mixed greens (arugula, spinach, and kale)
- 1/4 cup crumbled goat cheese or feta
- 1/4 cup sliced almonds, toasted
- 1/4 cup red onion, thinly sliced
- Balsamic glaze
- Salt and pepper to taste
DIRECTIONS
Peaches
- Preheat your grill to medium-high heat
- Brush the peach halves with olive oil on all sides
- Place the peach havles on the grill, cut side down
- Grill for 3-4 minutes per side, until they are caramelized. Remove from grill.
- Once cooled, slice the peaches into wedges.
- In a large salad bowl, combine the mixed greens, cheese, slice almonds, and red onion.
- In a small dressing bowl, whisk together the remaining olive oil, Manuka Doctor honey, salt and pepper
- Add the peach slices to the mixed greens, drizzle over the Manuka dressing, and gently toss to combine
- Finish with a drizzle of balsamic glaze over the top for extra flavor
